dc.description.abstractA alimentação é mais do que uma questão nutritiva, ela está relacionada também às vivências, experiências e emoções de cada indivíduo. O termo Comfort Food é um conceito novo que pode definir aqueles alimentos que trazem conforto, prazer e bem-estar ao consumir. Nesse cenário, o presente estudo trata sobre os quatro restaurantes mais antigos da cidade de Porto Alegre e busca identificar se existe relação do Comfort Food com a longevidade dos estabelecimentos. Para tanto, foi necessário entender sobre a gastronomia e o conceito de Comfort Food, as suas categorias do termo, os alimentos reconfortantes, assim como o uso do conceito por indústrias e restaurantes. Além disso, foram analisados os cardápios dos restaurantes para estabelecer se houveram mudanças no menu ao longo dos anos e se existe semelhança entre os locais. Realizou-se, então, uma revisão bibliográfica fundamentada em artigos científicos, teses e projetos acadêmicos, seguido de um estudo de caso com análise exploratória documental, buscando identificar dados estatísticos não-probabilísticos, compreendida na seleção dos cardápios. Diante disso, verificou-se que os cardápios mantiveram a essência durante os anos tendo algumas alterações para agradar mais ao público-alvo, além de notar que os quatro cardápios oferecem muitos pratos semelhantes. Com isso, pode-se concluir que os restaurantes de Porto Alegre com maior longevidade oferecem alimentos de conforto e prazer, principalmente no âmbito coletivo.
dc.description.abstract-enFood is much more than a nutritional question. It is also related to experience, background and individual emotions. The term Comfort food is a new concept that can define those foods that bring comfort, pleasure and well-being when consumed. In this scenario, the present study debates about the four oldest restaurants in the city of Porto Alegre and seeks to identify whether there is a relation between Comfort Food and their longevity. Therefore, it was necessary to understand gastronomy and the concept of Comfort Food, its categories of the term, the comforting foods, as well as the use of the concept by industries and restaurants. In addition, restaurant menus were analyzed to establish whether there have been changes in the menu over the years and whether there are similarities between the locations. A bibliographic review based on scientific articles, theses and academic projects was then carried out, followed by a case study with exploratory documental analysis seeking to identify non-probabilistic statistical data, included in the selection of menus. In view of this, it was found that the menus maintained their essence over the years, with some changes to please the target audience, besides noticing that the four menus offer many similar dishes. Therefore, it can be concluded that the restaurants in the city of Porto Alegre with greater longevity offer food of comfort and pleasure, mainly in the collective scope.
